A delightful rustic dessert featuring sweet blackberries, creamy feta, and a drizzle of honey, all encased in a flaky pie crust.

  • 1 pre-made pie crust
  • 2 cups fresh blackberries
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 egg (for egg wash)
  • 1 tablespoon sugar (for sprinkling)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium-sized bowl, gently combine the blackberries, crumbled feta cheese, honey, lemon juice, and cornstarch.
  3. Roll out your pre-made pie crust onto a baking sheet lined with parchment paper.
  4. Spoon the blackberry and feta mixture into the center of the crust, leaving about a 1-2 inch border.
  5. Carefully fold the edges of the crust over the filling, pleating as necessary.
  6. Brush the exposed crust with the egg wash and sprinkle with sugar.
  7. Bake for 25-30 minutes or until the crust is golden brown and the filling is bubbly.
  8. Allow the galette to cool slightly before slicing and serving.

Notes

For a healthier version, consider swapping half of the feta with ricotta or cottage cheese. Experiment with different fruits or cheeses for variation.
