  • 2 3/4 cups (345g) all-purpose flour
  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 cups (480g) powdered sugar
  • 3 tbsp meringue powder
  • 56 tbsp water
  • White gel food coloring
  • Gold edible paint or luster dust
  • Small gold sugar pearls

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg, vanilla extract, and optional almond extract, mixing until fully combined.
  4. Whisk together the all-purpose flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a smooth dough forms.
  6. Divide the dough into two equal portions for easier handling.
  7. Roll out each portion between parchment paper to about 1/4-inch thickness.
  8. Cut out holly-shaped cookies with a cookie cutter and transfer them to the baking sheets.
  9. Bake for 10-12 minutes until the edges are lightly golden.
  10. Cool the cookies completely on the sheets before icing.
  11. Whisk together the powdered sugar, meringue powder, and water for royal icing until smooth.
  12. Add white gel food coloring to the icing.
  13. Decorate each cooled cookie with royal icing, using gold edible paint or luster dust, and adorn with gold sugar pearls.
  14. Allow the icing to dry completely before serving.

Notes

Always use room-temperature butter and avoid over-mixing to achieve the best texture.
