  • 2 ripe bananas, mashed
  • 1/2 cup softened unsalted butter
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup sour cream
  • 1 1/2 cups fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 5-inch loaf pan.
  2. Whisk together the flour, baking soda, salt, and cinnamon in a mixing bowl.
  3. Cream the softened butter and granulated sugar until light and fluffy in another bowl.
  4. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract and mashed bananas.
  5. Blend these together until smooth.
  6. Gradually add the dry ingredients to the banana mixture, alternating with the sour cream, stirring gently.
  7. Fold in the blueberries carefully.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55-60 minutes until a toothpick inserted comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
