A delightful fusion of ripe bananas and juicy blueberries, creating a comforting loaf perfect for breakfast, snacks, or dessert.

  • 2 ripe bananas, mashed
  • 1/2 cup Greek yogurt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×5-inch loaf pan.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Add the Greek yogurt, melted butter, sugar, eggs, and vanilla extract to the mashed bananas and mix until combined.
  4. Whisk together the all-purpose flour, baking soda, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  6. Fold in the blueberries carefully.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes, or until a toothpick comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Ensure bananas are very ripe for maximum sweetness. Use room temperature ingredients for a smoother mix.
