  • 1/2 cup Greek yogurt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×5-inch loaf pan.
  3. Mash the ripe bananas until smooth.
  4. Add the Greek yogurt, melted butter, sugar, eggs, and vanilla extract to the mashed bananas. Mix until combined.
  5. Whisk together the all-purpose flour, baking soda, baking powder, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet ingredients, stirring gently.
  7. Fold in the blueberries until evenly distributed.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60-70 minutes, or until a toothpick comes out clean.
  10. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Use fresh blueberries for the best flavor; the ripeness of bananas also impacts the sweetness of the bread.
