A delightful no-bake dessert featuring a creamy filling topped with blueberry sauce, perfect for warm days.

  • 2 tablespoons water
  • 2 cups fresh blueberries
  • 1/3 cup granulated white sugar
  • 1/2 cup water
  • Juice of 1 fresh lemon
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy whipping cream
  • 2 tablespoons granulated sugar
  • 3 cups cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Begin by making the blueberry sauce: In a bowl, combine the cornstarch and water, stirring until dissolved. In a pan, mix the blueberries, sugar, water, and lemon juice; cook this mixture over medium-high heat for about 5 minutes.
  2. Once the blueberries have cooked down, incorporate the cornstarch mixture into the blueberry mixture and bring to a boil.
  3. Allow the sauce to cool for 30 minutes, then refrigerate for 1-2 hours to let the flavors meld.
  4. Prepare the crust: Line a springform pan with parchment paper. In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the base of the pan.
  5. In a separate bowl, whip the heavy cream and 2 tablespoons of sugar to stiff peaks.
  6. Beat the softened cream cheese, sugar, and vanilla extract in another bowl until smooth and creamy.
  7. Gently fold in the blueberry sauce and the whipped cream.
  8. Pour the filling into the prepared crust evenly, smoothing the top with a spatula.
  9. Chill overnight in the refrigerator to set.
