Blueberry Cheesecake Parfait

A delightful treat combining creamy cheesecake with vibrant blueberries, visually stunning and delicious.

Ingredients

  • 400 g frozen blueberries
  • 2 tablespoons lemon juice
  • 2 tablespoons sugar
  • 125 g digestive biscuits
  • 42 g unsalted butter, melted
  • 180 g white chocolate
  • 125 ml whipping cream
  • 250 g low-fat cream cheese, softened
  • 125 ml low-fat sour cream, at room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the blueberry layer: In a saucepan, combine the frozen blueberries, lemon juice, and sugar. Cook over medium heat for 5-7 minutes, stirring occasionally, until the blueberries soften and the mixture thickens into a syrup. Remove from heat and let it cool.
  2. Make the biscuit base: Place the digestive biscuits in a food processor and pulse until finely crushed. Add the melted butter and pulse until the mixture resembles wet sand. Divide the biscuit mixture evenly among serving glasses or jars, pressing it down gently to form an even layer at the bottom. Place in the refrigerator while preparing the other layers.
  3. Prepare the cheesecake filling: In a heatproof bowl, melt the white chocolate over a double boiler or in the microwave, stirring every 30 seconds until smooth. Let the melted chocolate cool slightly. In a large bowl, beat the cream cheese, sour cream, and vanilla extract together until smooth and creamy. Add the cooled melted white chocolate and mix well. In a separate bowl, whip the whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. Assemble the parfaits: Spoon or pipe a layer of the cheesecake mixture over the biscuit base. Add a layer of the blueberry mixture on top. Repeat the layers as desired, ending with the blueberry layer.
  5. Chill the parfaits: Refrigerate the parfaits for at least 120 minutes before serving to allow the layers to set. Optionally, top with extra fresh blueberries or a dollop of whipped cream for garnish.

Consider using fresh blueberries for enhanced flavor, adjusting sugar based on berry sweetness, or adding nuts for texture.
