  • 1/4 cup granulated sugar (for streusel topping)
  • 1/4 cup unsalted butter, cold and cubed
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare the cream cheese filling: In a medium bowl, beat together the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
  2. Make the cake batter: Preheat your oven to 350°F (175°C) and grease a 9-inch round or square baking pan. In another bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract. Gradually mix in the dry ingredients with the sour cream until just combined.
  3. Assemble the coffee cake: Pour half of the batter into the prepared pan and smooth it out. Spread the cream cheese filling over this layer. Dollop the remaining batter over the filling and smooth it out gently. Sprinkle the blueberries evenly on top.
  4. Prepare the streusel topping: In a small bowl, mix together the flour, sugar, and cinnamon. Add the cold cubed butter and work it into the dry mixture until it resembles coarse crumbs.
  5. Bake the cake: Place the cake in the oven and bake for 45-50 minutes, or until a toothpick comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
