Delicious Blueberry Lime Cheesecake Cupcakes combining creamy cheesecake with fresh blueberries and zesty lime.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 16 oz. cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 1 lime
  • 1/4 cup fresh lime juice
  • 1/2 cup sour cream
  • 1 cup fresh or frozen blueberries
  • 2 tbsp granulated sugar (for topping)
  • 1 tbsp lemon juice (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C) and line a muffin tin with cupcake liners.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl; spoon it into cupcake liners and press down firmly. Bake for 5-7 minutes.
  3. Beat the softened cream cheese and 1/2 cup sugar until smooth, then add eggs one at a time. Stir in vanilla extract, lime zest, and lime juice, then fold in sour cream.
  4. Spoon the cheesecake mixture into the cooled crusts, filling each about 3/4 full. Bake for 18-20 minutes until set but slightly jiggly in the center, then chill for at least 2 hours.
  5. Combine blueberries, 2 tbsp sugar, and lemon juice in a saucepan; cook for 5-7 minutes until thickened. Allow the topping to cool completely.
  6. Spoon the blueberry topping onto each cupcake just before serving.

Notes

Ensure cream cheese is at room temperature for a smooth batter. Do not overbake the cupcakes.
