A mouthwatering twist on classic lasagna, featuring slow-cooked beef short ribs, creamy cheeses, and rich flavors that evoke warmth and comfort.

  • 2 lbs bone-in beef short ribs
  • 2 tbsp olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 12 lasagna noodles, cooked and drained
  • 1 1/2 cups ricotta cheese
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 1 tbsp fresh parsley, chopped (optional)
  • 2 cups marinara sauce

Instructions

  1. Start by heating the olive oil in a large pot or Dutch oven over medium-high heat. Season the short ribs generously with salt and pepper. Place the short ribs in the pot and brown them on all sides, about 5-7 minutes.
  2. Once browned, add the diced onion and minced garlic to the pot. Sauté for about 2-3 minutes, or until the onion becomes translucent.
  3. Next, stir in the beef broth, crushed tomatoes, tomato paste, Worcestershire sauce, oregano, and basil. Bring the mixture to a simmer and let it cook on low heat for 2.5 to 3 hours.
  4. After cooking, remove the bones from the pot. Shred the short rib meat and return it to the pot for extra flavor.
  5. Meanwhile, in a mixing bowl, combine the ricotta, mozzarella, Parmesan, egg, and parsley. Stir until smooth.
  6. Preheat the oven to 375°F (190°C). Lay the cooked lasagna noodles flat on a clean surface. Spread a generous amount of the cheese mixture on each noodle.
  7. Carefully place the lasagna rolls seam side down in a greased baking dish.
  8. In a saucepan, heat the marinara sauce. Pour this sauce over the lasagna rolls before baking.
  9. Cover the dish with aluminum foil and bake for 20-25 minutes. Then uncover and bake for an additional 10 minutes, until the cheese is bubbly.
  10. Once baked, remove the dish from the oven and let it cool for a few minutes. Garnish with chopped parsley if desired.

Allow the short ribs to slow-cook thoroughly for the best flavor. Choose high-quality cheese for optimal taste.
