Delicious and crispy Broccoli Cheese Patties with a cheesy center, perfect for family dinners or as a nutritious snack.

Ingredients

  • 2 cups of broccoli florets, steamed and finely chopped
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of grated Parmesan cheese
  • 1/2 cup of breadcrumbs
  • 2 large eggs
  • 2 cloves of garlic, minced
  • 1/4 teaspoon of dried oregano
  • Salt and pepper to taste
  • 4 slices of melting cheese (such as cheddar, mozzarella, or gouda), cut into small squares
  • Olive oil for frying

Instructions

  1. In a large mixing bowl, combine the steamed and finely chopped broccoli, shredded cheddar, grated Parmesan, breadcrumbs, eggs, minced garlic, dried oregano, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Take a small handful of the mixture and flatten it into a patty shape in your palm. Place a square of melting cheese in the center and fold the edges over the cheese, ensuring it is completely enclosed.
  3. Heat a generous amount of olive oil in a skillet over medium heat until hot. Place the patties in the skillet without overcrowding the pan.
  4. Fry the patties for approximately 3-4 minutes on each side, until golden brown and crispy.
  5. Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil. Serve hot, garnished with fresh parsley or grated Parmesan.

Notes

These patties can be customized with fresh herbs or different vegetables. They can be made ahead of time and freeze well.
