  • 1/4 teaspoon baking powder
  • 1/2 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil or vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine melted butter and granulated sugar until smooth.
  3. Beat in the eggs and vanilla extract until blended.
  4. Whisk together cocoa powder, flour, salt, and baking powder in another bowl.
  5. Gradually mix dry ingredients into the wet mixture until smooth.
  6. Drop rounded portions of dough onto the baking sheet, leaving space for spreading.
  7. Bake for 10 to 12 minutes, then cool on a wire rack.
  8. Mix peanut butter, powdered sugar, and vanilla extract for the filling.
  9. Spread the filling on half of the cookies and top with the remaining cookies.
  10. Melt chocolate chips with coconut oil until smooth and dip cookie sandwiches.
  11. Let them set on a wire rack before serving.
