  • ½ teaspoon Baking Powder
  • ¼ teaspoon Salt
  • ½ cup Unsalted Butter, softened
  • ½ cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • ¼ cup Blackberry Jam
  • 2 tablespoons Powdered Sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract, mixing until combined.
  5. Gradually add the dry ingredients, stirring gently until just incorporated.
  6. Roll the dough into tablespoon-sized balls and place them on the baking sheet.
  7. Create an indentation in each cookie with your thumb.
  8. Spoon a small amount of blackberry jam into each indentation.
  9. Bake for 10-12 minutes, until the edges are golden brown.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack. Dust with powdered sugar before serving.
