A delightful twist on classic pecan pie, these cookie-sized bundles are soft, buttery, and studded with crunchy pecans and optional chocolate chips.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Add in the egg and vanilla extract, mixing until well combined.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Incorporate the dry ingredients into the wet mixture, stirring gently to avoid overmixing.
  6. Fold in the chopped pecans and chocolate chips if desired.
  7. Drop spoonfuls of dough onto a prepared baking sheet, leaving space between each.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Allow cookies to cool slightly before serving.

Notes

Ensure your butter is at room temperature before creaming. Toasting the pecans enhances flavor.
