A vibrant and nourishing dish combining tender cactus and aromatic spices for a delightful breakfast or brunch.

Ingredients

  • 1 tablespoon vegetable oil or 1/4 cup water or vegetable broth
  • 1/2 large yellow or red onion, finely diced
  • 4 to 5 sliced mushrooms (button, white, or shiitake)
  • 1/2 cup nopalitos (tender cactus strips)
  • 3 minced garlic cloves
  • 1.5 teaspoons ground cumin
  • A pinch of smoked paprika
  • 14-ounce package of extra-firm tofu, drained and pressed
  • Salt to taste

Instructions

  1. Start by heating the oil in a large skillet over medium-high heat until it shimmers.
  2. Add the finely diced onion, sliced mushrooms, nopalitos, and minced garlic to the skillet. Sauté for 3-4 minutes until the onions turn translucent.
  3. Next, sprinkle in the ground cumin and smoked paprika. Stir for about a minute to toast the spices.
  4. Crumble the tofu into the skillet, breaking it into chunks. Stir gently to combine and cook for another 3-4 minutes.
  5. Finally, season with salt to taste, stirring well to ensure flavor in every bite. Serve hot.

Notes

For a lighter option, use water or vegetable broth instead of oil. Experiment with different vegetables for variety.
