  • 1 1/2 lbs boneless, skinless chicken breasts, cut into strips
  • 2 tbsp olive oil
  • 1 cup buttermilk for marinating
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 tbsp Cajun seasoning
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Vegetable oil for frying

Instructions

  1. Marinate the chicken: Place the chicken strips in a large bowl. Pour in the buttermilk and add 1 tablespoon of the Cajun seasoning. Gently toss to ensure the chicken is well coated. Cover and refrigerate for at least 30 minutes.
  2. Prepare the breading: In a shallow bowl, combine the all-purpose flour, cornmeal, remaining Cajun seasoning, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Coat the chicken: Remove the chicken from the buttermilk one at a time, shaking off excess. Dredge in the flour mixture, coating all sides.
  4. Fry the strips: Heat vegetable oil in a deep skillet over medium-high heat. Fry the chicken in batches for 3-4 minutes on each side until golden brown and cooked through.
  5. Drain and serve: Transfer cooked strips to a plate lined with paper towels to drain excess oil. Serve hot with dipping sauce.

Notes

For extra flavor, add hot sauce to the marinade and let the coated chicken rest for 10 minutes before frying.
