4 large russet potatoes
2 tablespoons of olive oil
2 teaspoons of Cajun seasoning
1 teaspoon of garlic powder
1/2 teaspoon of paprika
1/4 teaspoon of black pepper
1 teaspoon of salt
1 tablespoon of chopped fresh parsley (for garnish)
1/2 cup of mayonnaise
2 tablespoons of ketchup
1 tablespoon of hot sauce (to taste)
1 teaspoon of Dijon mustard
1 teaspoon of lemon juice
1/2 teaspoon of smoked paprika
1 clove of garlic, minced
1/4 teaspoon of cayenne pepper (optional)
Instructions
Preheat your oven to 425°F (220°C).
Wash and peel the russet potatoes and cut them into even-sized fries.
Pat them dry with a paper towel to remove excess moisture.
Toss the cut fries in a large bowl with olive oil until evenly coated.
Add the Cajun seasoning, garlic powder, paprika, black pepper, and salt to the bowl and toss again.
Spread the seasoned fries evenly in a single layer on a baking sheet.
Bake for 30-35 minutes, flipping halfway through.
Prepare the voodoo sauce by combining mayonnaise, ketchup, hot sauce, Dijon mustard, lemon juice, smoked paprika, minced garlic, and cayenne pepper in a bowl.
Remove fries from the oven and transfer them to a serving platter.
Drizzle with voodoo sauce or serve it on the side for dipping.
Sprinkle chopped fresh parsley over the top and serve immediately.

For extra crispiness, soak the fries in cold water for 30 minutes before cooking.
