Instructions

  1. Prepare the Churro Dough: In a medium saucepan, bring the water, butter, and salt to a boil over medium heat. Once it boils, remove from heat and stir in the flour until fully combined. Return to heat for 1-2 minutes, stirring constantly until smooth.
  2. Incorporate Eggs and Vanilla: Once the dough has slightly cooled, stir in the eggs one at a time until fully incorporated. Mix in the vanilla extract.
  3. Heat the Oil: In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).
  4. Make the Cheesecake Filling: In a medium bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and fluffy.
  5. Pipe the Churro Rings: Using a piping bag, pipe the churro dough into circular rings, about 3-4 inches in diameter, into the hot oil.
  6. Fry the Churros: Fry each churro ring for 2-3 minutes on each side or until golden brown and crispy.
  7. Cinnamon-Sugar Coating: Mix granulated sugar and ground cinnamon in a shallow dish, then roll each churro ring in the mixture while warm.
  8. Assemble the Treats: Fill each churro ring with the cheesecake filling and drizzle with warm caramel sauce.
