A delightful fusion of cheesecake and crème brûlée with a creamy filling and caramelized sugar topping.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine the graham cracker crumbs and 1/4 cup of sugar in a medium bowl.
  3. Pour in the melted butter and stir until well-coated.
  4. Press this mixture firmly into the bottom of a springform pan.
  5. Bake for 10 minutes, then remove and allow to cool.
  6. Beat the softened cream cheese and 1 cup of sugar in a large bowl until smooth.
  7. Add the vanilla extract and mix well.
  8. Crack in the eggs one by one, blending after each addition.
  9. Pour in the heavy cream and blend until silky-smooth.
  10. Gently pour the cheesecake batter over the baked crust.
  11. Bake for 50-60 minutes until the center is slightly jiggly.
  12. Turn off the oven and let the cheesecake cool for 1 hour with the door slightly ajar.
  13. Refrigerate for at least 4 hours or overnight.
  14. Smooth the top with brown sugar and caramelize using a kitchen torch before serving.

Notes

Ensure all ingredients are at room temperature for a smooth batter. Keep the kitchen torch moving while caramelizing the sugar to prevent burning.
