Bring a burst of flavor and vibrant color to your summer grilling with these Caribbean Jerk Shrimp Skewers, marinated in aromatic spices for a unique culinary experience.

  • 1 lb large shrimp
  • 1 red bell pepper, cut into pieces
  • 1 red onion, cut into chunks
  • 1 cup fresh pineapple chunks
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped
  • 2 tsp ground allspice
  • 1 tsp dried thyme
  • 1 tsp ground cinnamon
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 2 cloves garlic, minced
  • 1 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 small piece of fresh ginger, grated (about 1 tsp)
  • 1 Scotch bonnet or habanero pepper, finely chopped (optional)

Instructions

  1. In a medium bowl, whisk together allspice, thyme, cinnamon, smoked paprika, cayenne pepper, black pepper, salt, garlic, brown sugar, soy sauce, lime juice, olive oil, ginger, and Scotch bonnet pepper.
  2. Add shrimp to the marinade, coating evenly. Cover and refrigerate for 30 minutes to 1 hour.
  3. Soak wooden skewers in water for 30 minutes to prevent burning. Cut the bell pepper and onion into chunks.
  4. Thread marinated shrimp onto skewers, alternating with pineapple chunks, bell pepper, and onion.
  5. Preheat the grill over medium-high heat and brush with olive oil.
  6. Grill skewers for 2-3 minutes on each side until shrimp are pink and opaque.
  7. Drizzle with olive oil and lime juice, then garnish with chopped cilantro and serve hot.

Notes

Marinate shrimp overnight for deeper flavor. For a smoky taste, grill over hardwood charcoal or use a grill pan indoors.
