Delicious muffins combining the sweetness of carrots, tartness of apples, and subtle flavor of zucchini, topped with creamy cream cheese frosting.

  • 1 cup finely grated carrots
  • 1 cup finely grated zucchini
  • 1 grated apple
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • 2 large eggs
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract in a bowl until smooth.
  3. Stir in the grated carrots, zucchini, and apple until well mixed.
  4. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
  5. Mix the dry ingredients into the wet mixture until just combined.
  6. Fill each muffin cup about two-thirds full with the batter.
  7. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack.
  9. Beat the cream cheese and butter until creamy. Gradually add the powdered sugar and mix until smooth.
  10. Spread the cream cheese frosting on the cooled muffins and enjoy!
