Delightful macarons featuring the sweet and earthy flavors of carrots, with notes of orange and cinnamon.

  • 100g powdered sugar
  • 100g granulated sugar
  • 2 large egg whites, at room temperature
  • 1/4 tsp cream of tartar (optional)
  • Orange and green food coloring (optional)
  • 100g cream cheese
  • 50g unsalted butter, softened
  • 100g powdered sugar (for filling)
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 30g finely grated carrot

Instructions

  1. Preheat your oven to 300°F (150°C) and line your baking sheets with parchment paper.
  2. Sift together the almond flour and powdered sugar into a bowl.
  3. Beat the egg whites until soft peaks form, then gradually add granulated sugar and beat until glossy and stiff peaks are formed.
  4. Fold the sifted dry ingredients into the whipped egg whites carefully.
  5. Divide the batter into two bowls and add food coloring for the carrot shells.
  6. Transfer the colored batter into piping bags and pipe small circles onto the prepared baking sheets.
  7. Rest the piped macarons for 30-60 minutes to form a skin.
  8. Bake for 15-18 minutes until they release easily from the paper.
  9. Beat the cream cheese and butter, then mix in the powdered sugar, vanilla extract, cinnamon, and grated carrot for the filling.
  10. Match the shells, pipe the filling on one shell, and sandwich with another.
  11. Let rest in the fridge for at least 24 hours before serving.

For best results, ensure egg whites are at room temperature and sift dry ingredients for a smooth batter. Avoid over-mixing.
