A delightful twist on the classic French treat, combining the comforting sweetness of carrots with the elegant texture of macarons.

Ingredients

  • 100g almond flour
  • 100g powdered sugar
  • 100g granulated sugar
  • 2 large egg whites (at room temperature)
  • 1/4 tsp cream of tartar (optional)
  • Orange and green food coloring (for the carrot design, optional)
  • 100g cream cheese
  • 50g unsalted butter, softened
  • 100g powdered sugar (for filling)
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 30g finely grated carrot (with excess moisture squeezed out)

Instructions

  1. Preheat the oven to 300°F (150°C) and line your baking sheets with parchment paper.
  2. Sift together the almond flour and powdered sugar into a bowl.
  3. Beat the egg whites in a clean bowl until soft peaks form, then gradually add the granulated sugar.
  4. Fold the dry ingredients into the whipped egg whites carefully.
  5. Divide the batter into two bowls, adding food coloring to each.
  6. Transfer the colored batter into piping bags and pipe small circles onto the prepared baking sheets.
  7. Allow the piped macarons to rest for 30-60 minutes to form a skin.
  8. Bake for 15-18 minutes until firm to the touch, then cool completely.
  9. Beat the cream cheese and butter until smooth, then add powdered sugar, vanilla, cinnamon, and grated carrot.
  10. Pick matching macaron shells, pipe filling onto one, and sandwich with another.
  11. Let the assembled macarons rest in the fridge for at least 24 hours before enjoying.

Notes

Ensure your egg whites are at room temperature and free from yolk for best results. Consider adding a pinch of nutmeg for extra warmth.
