A delightful Cajun chicken dish featuring a crispy coating and spicy jalapeno honey, perfect for any occasion.

  • 1 pound boneless, skinless chicken breasts or thighs, trimmed to about 1/2 inch thick
  • 3/4 cup creamy buttermilk
  • 1 large egg
  • 2 tablespoons aromatic Cajun seasoning, divided
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 4 cups vegetable or peanut oil
  • 4 buns, lightly toasted
  • 6 tablespoons jalapeno honey
  • 4 tablespoons creamy mayonnaise

Instructions

  1. Marinate the chicken by whisking together the buttermilk, egg, and 1 tablespoon Cajun seasoning in a bowl. Add the chicken pieces and coat thoroughly, then refrigerate for at least 1 hour, or overnight for best results.
  2. Combine the flour, remaining Cajun seasoning, cornstarch, and baking powder in another bowl and mix well.
  3. Remove the chicken from the buttermilk mixture, letting excess drip off. Dredge each piece in the flour mixture and set on a wire rack.
  4. Heat the oil in a large pot to 350°F (180°C) using a thermometer.
  5. Carefully add the chicken pieces to the hot oil and fry in batches until golden brown, about 4-5 minutes per side. Drain on a wire rack.
  6. Assemble sandwiches by placing crispy chicken on toasted buns, drizzling with jalapeno honey, and spreading mayonnaise on the other half.

Notes

Marinate longer for enhanced flavor and ensure oil is at correct temperature for frying.
