Ingredients

Scale
  • 2 cans of crushed tomatoes
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 teaspoon of sugar
  • Salt and pepper to taste
  • 1 cup of flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of butter, melted
  • 1/2 cup of milk
  • Fresh basil for garnish (optional)

Instructions

  1. Heat a large pot over medium heat. Add the diced onion and minced garlic, sautéing until soft and translucent for about 5-7 minutes.
  2. Pour in the crushed tomatoes and vegetable broth. Add the sugar, salt, and pepper. Stir to combine and let the mixture simmer for about 20 minutes.
  3. While your soup is simmering, combine flour, baking powder, and salt in a bowl. Stir in the shredded cheddar cheese.
  4. Add melted butter and milk to the dry ingredients. Mix gently until just combined; avoid overmixing.
  5. Drop spoonfuls of the dumpling mixture into the simmering soup. Cover and cook for 10-15 minutes.
  6. Serve the soup in bowls, garnishing with fresh basil if desired.

Notes

Ensure the dumpling batter remains lumpy for maximum fluffiness. Avoid lifting the lid too often while cooking.
