  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 tbsp all-purpose flour
  • 1 1/2 cups fresh strawberries, diced
  • 1/4 cup granulated sugar (for strawberries)
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a medium bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter.
  3. Press the mixture into the bottom of a greased 9×13-inch baking pan.
  4. In a large bowl, beat the cream cheese with 1 cup of sugar until smooth and creamy.
  5. Add the eggs one at a time, mixing thoroughly after each addition.
  6. Stir in the vanilla extract, sour cream, and flour.
  7. Pour the filling over the crust and spread evenly.
  8. Bake for 30-35 minutes until the filling is set but slightly jiggly in the center.
  9. Let cool for 30 minutes, then refrigerate for at least 2 hours to set completely.
  10. For the topping, combine the diced strawberries, 1/4 cup sugar, and lemon juice in a saucepan; cook until thickened.
  11. Once chilled, spread the strawberry topping over the cheesecake bars.
  12. Slice into squares, serve cold, and enjoy!
