A delightful cheesecake combining zesty citrus and a rich creaminess, topped with sweet cherries and crunchy pistachios.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup finely chopped pistachios
  • 1/4 cup sugar
  • 1/4 cup unsalted butter, melted
  • 3 packages cream cheese, softened
  • 1 cup sour cream
  • 1 cup sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon zest
  • 1 tablespoon lime zest
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1 cup fresh or frozen cherries, pitted
  • 1/4 cup sugar (for the topping)
  • 1 tablespoon lemon juice (for the topping)

Instructions

  1. Preheat your oven to 325°F (163°C). Prepare a 9-inch springform pan by greasing it and lining the bottom with parchment paper.
  2. Combine the graham cracker crumbs, finely chopped pistachios, sugar, and melted butter in a mixing bowl. Press this mixture firmly into the base of the springform pan. Bake for about 10 minutes.
  3. Beat together the softened cream cheese and sour cream until smooth. Gradually add the sugar, incorporating the eggs one at a time.
  4. Add the vanilla extract, lemon zest, lime zest, lemon juice, and lime juice to the mixture and mix gently until combined.
  5. Fold in the chopped pistachios and pour the cheesecake mixture over the cooled crust.
  6. Bake for 50-60 minutes until set. Allow to cool, then refrigerate for at least 4 hours.
  7. Combine cherries, sugar, and lemon juice in a saucepan. Simmer for 10-15 minutes until thickened, then cool.
  8. Serve topped with the cherry mixture.

Notes

For best results, use room temperature cream cheese and eggs. Allow the cheesecake to cool gradually to prevent cracking.
