Ingredients

Scale

  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Combine cream cheese, powdered sugar, and vanilla extract in a small bowl; beat until smooth and creamy.
  3. Whisk together flour, baking soda, and salt in a medium bowl.
  4. Cream butter using an electric mixer, then gradually add granulated and brown sugars until light and fluffy.
  5. Add eggs one at a time, beating well after each addition, then stir in the 2 tsp vanilla extract.
  6. Combine the dry ingredients with the wet mixture until just mixed.
  7. Fold in chocolate chips.
  8. Scoop 1 tablespoon of dough, flatten it, place a teaspoon of cheesecake filling, and top with another tablespoon of dough; seal it to form a ball.
  9. Place the cookie balls on the prepared baking sheet, spacing them apart.
  10. Bake for 10-12 minutes or until edges are golden brown.
  11. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For best results, ensure cream cheese is at room temperature and refrigerate the dough if too soft.
