A comforting dish of fluffy potatoes stuffed with cheesy goodness, tender chicken, and vibrant broccoli.

Ingredients

  • 4 large russet potatoes, washed and pricked with a fork
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets, steamed until just tender
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 cup cheddar cheese, shredded
  • 1/4 cup green onions, chopped
  • Extra cheese and green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rub the washed potatoes with olive oil and season generously with salt and pepper.
  3. Place the seasoned potatoes on a baking sheet and bake them for 60 minutes, or until tender.
  4. Once the potatoes have cooled slightly, slice a slit on the top of each potato and scoop out the insides.
  5. In a large mixing bowl, combine the scooped potato, shredded chicken, steamed broccoli, sour cream, milk, cheddar cheese, and green onions.
  6. Spoon this mixture back into the potato skins, creating a generous filling, and top each potato with extra cheese.
  7. Return the stuffed potatoes to the oven and bake for an additional 20 minutes, or until the cheese is melted and bubbly.
  8. Finally, garnish with more green onions just before serving.

Notes

Mix in garlic powder or smoked paprika for added flavor. Consider topping with crushed breadcrumbs for texture.
