  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 4 slices of thick-cut garlic bread
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped fresh parsley (optional)
  • 1 tbsp butter (for grilling)

Instructions

  1. Preheat your grill or skillet over medium heat.
  2. Season the chicken breasts with olive oil, salt, pepper, and garlic powder.
  3. Grill the chicken for about 6-7 minutes per side until fully done; let rest before slicing.
  4. Mix the mayonnaise and Dijon mustard in a small bowl.
  5. Butter one side of each slice of garlic bread.
  6. Heat a skillet over medium heat and toast the garlic bread until golden brown, about 2-3 minutes per side.
  7. Spread the mayo-mustard mixture on the unbuttered side of each slice.
  8. Layer the sliced chicken on one slice of bread, then sprinkle with mozzarella cheese.
  9. Close the sandwich with the second slice of bread.
  10. Grill the sandwich for 2-3 minutes, pressing down gently.
  11. Slice the sandwich in half and sprinkle with parsley, if using.
