  • 1 small onion, chopped
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish.
  2. Heat olive oil in a skillet over medium heat and add the ground beef, breaking it apart and cooking until browned.
  3. Add the chopped onion and cook until softened, about 3-4 minutes.
  4. Stir in the garlic powder, onion powder, salt, and pepper.
  5. Add diced tomatoes and beef broth, bringing to a gentle simmer.
  6. Stir in the rice and allow it to cook for about 5 minutes.
  7. Transfer the mixture to the prepared casserole dish and spread it out evenly.
  8. Sprinkle shredded cheddar and mozzarella cheeses on top.
  9. Cover with aluminum foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 10-15 minutes until golden and bubbly.
  11. Let rest for 5 minutes before serving.
