Delightful Cheesy Mashed Potato Puffs, a perfect way to repurpose leftover mashed potatoes into crispy, cheesy treats.

Ingredients

  • 2 cups mashed potatoes (preferably leftover)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup sour cream or cream cheese (optional)
  • 1/4 cup chopped green onions or chives
  • 1 egg
  • Salt & pepper to taste
  • 1/4 cup breadcrumbs (for coating)
  • 2 tbsp butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Mix together the mashed potatoes, cheddar cheese, parmesan cheese, sour cream (or cream cheese), green onions (or chives), and the egg in a large bowl until well combined.
  3. Season the mixture with salt and pepper to taste.
  4. Shape the mixture into small 1-2 tablespoon balls or puffs.
  5. Place the puffs on the prepared baking sheet, ensuring enough space for baking.
  6. Roll each puff in breadcrumbs to coat them lightly.
  7. Drizzle the melted butter over the top of each puff.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
  9. Serve warm and enjoy!

Notes

For extra crispy puffs, refrigerate the shaped puffs for about 30 minutes before baking.
