Golden-brown, crispy bites filled with creamy and cheesy mashed potatoes that melt in your mouth, perfect as an appetizer or side dish.

Ingredients

  • 2 cups creamy mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • Cooking spray or oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, egg, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Form the potato mixture into small balls, about 1-2 inches in diameter.
  4. Roll each ball in breadcrumbs to coat evenly.
  5. Place the coated potato puffs on a baking sheet lined with parchment paper.
  6. Lightly spray or brush the potato puffs with cooking spray or oil.
  7. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  8. Let the puffs cool slightly before serving.

Notes

For a lighter version, use Greek yogurt instead of sour cream. Ensure mashed potatoes are not too wet for the best texture.
