A delightful comfort food combining savory meatballs, tender potatoes, and a melty cheese topping, perfect for family gatherings or weeknight dinners.

Ingredients

  • 1 lb ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 handful chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 4 medium potatoes, peeled and diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground beef or turkey, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, pepper, and Italian seasoning in a large bowl.
  3. Mix until everything is harmoniously combined.
  4. Shape the mixture into meatballs, roughly the size of a golf ball, and arrange them on a parchment-lined baking sheet.
  5. Toss the diced potatoes with olive oil, garlic powder, salt, and pepper in another bowl.
  6. Spread the seasoned potatoes on a separate baking sheet.
  7. Bake the meatballs for about 20 minutes and the potatoes for 25-30 minutes until tender and golden brown.
  8. Combine the baked meatballs and potatoes in a large baking dish and sprinkle the cheddar and mozzarella cheese over the top.
  9. Bake for an additional 5-10 minutes until the cheese is melted and golden.

Notes

Ensure to not overcrowd the baking sheets for optimal roasting. Mixing different cheeses can enhance flavor.
