A delightful dish that combines tender chicken, vibrant vegetables, and a creamy cheese sauce for a comforting family meal.

Ingredients

Scale
  • 2 chicken breasts
  • 1 cup diced tomatoes
  • 1 cup corn
  • Bell peppers (any color)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can black beans
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Begin by seasoning the chicken breasts with taco seasoning, salt, and pepper.
  2. Heat the olive oil in a skillet over medium heat.
  3. Carefully lay in the seasoned chicken and cook until golden brown—about 6-7 minutes per side. Remove and let it rest.
  4. Add the diced tomatoes, corn, bell peppers, and black beans to the skillet.
  5. Cook the mixture for 5-6 minutes until the vegetables soften.
  6. Reduce the heat to low and sprinkle the shredded cheese over the top, stirring until melted.
  7. Slice the rested chicken and return it to the skillet, mixing everything until heated through.
  8. Serve immediately and enjoy!

Notes

For a lighter take, consider using grilled chicken or turkey breast. Don’t rush the cheese melting process for a smooth sauce.
