A delightful dish bringing together traditional Mexican flavors into one hearty casserole, perfect for family gatherings or cozy dinners.

  • 1 lb ground beef or chicken
  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 cup tortilla chips, crushed
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add the chopped onion, cooking until softened.
  4. Incorporate the ground beef or chicken, cooking until browned.
  5. Stir in the taco seasoning, black beans, diced tomatoes, and corn; simmer for 5-7 minutes.
  6. In a greased baking dish, layer the beef mixture, followed by crushed tortilla chips.
  7. Top with shredded cheeses.
  8. Bake for 15-20 minutes until cheese is melted.
  9. Add sour cream and green onions before serving.
  10. Serve hot and enjoy!
