  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 bell peppers (red, yellow, and green), chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 cup chicken broth
  • 1 cup uncooked rice
  • 2 cups shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Add the olive oil and cook the ground beef until browned, about 5-7 minutes.
  3. Add the chopped onion and minced garlic, sautéing together for about 3-4 minutes until translucent.
  4. Mix in the chopped bell peppers, salt, black pepper, oregano, and basil. Cook for another 5 minutes.
  5. Stir in the diced tomatoes, tomato sauce, and chicken broth until well combined.
  6. Add the uncooked rice and stir to distribute evenly.
  7. Lower the heat to a simmer, covering the skillet for 18-20 minutes.
  8. Transfer the mixture into a greased 9×13-inch baking dish and spread evenly.
  9. Sprinkle the shredded cheddar cheese on top.
  10. Bake for 15 minutes, or until the cheese is melted and bubbly.
  11. Let it cool for a few minutes before garnishing with freshly chopped parsley.

For quicker prep, let the ground beef brown while preparing vegetables. Consider using fresh bell peppers, different cheeses, or additional spices for varied flavors.
