A comforting casserole featuring the sweet, mild flavor of Vidalia onions, creamy cheese, and crispy cracker topping.

  • 4 large Vidalia onions
  • 2 tablespoons unsalted butter
  • 3 eggs
  • 1 (5 oz.) can evaporated milk
  • 1 cup crumbled Ritz crackers
  • 1 1/2 cups (6 oz.) shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup crumbled Ritz crackers (for topping)
  • 3 tablespoons unsalted butter, melted (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your Casserole Filling by slicing off the root and stem ends of your Vidalia onions. Cut them in half vertically, peel off the skins and chop them into slivers roughly 1/4-inch to 1/2-inch thick. Place in a saucepan, cover with water, and bring to a boil. Simmer for about 8 minutes, then drain.
  3. Toss the warm onions with 2 tablespoons of unsalted butter.
  4. In a large mixing bowl, beat the eggs with the evaporated milk until well blended. Add in the cooked onions, crumbled Ritz crackers, shredded cheddar cheese, salt, and pepper. Mix well.
  5. Transfer the mixture to a 9×13-inch baking dish that has been coated with non-stick spray.
  6. Prepare the Crumb Topping by mixing 1 cup of crumbled Ritz crackers with 3 tablespoons of melted butter. Sprinkle evenly over the casserole.
  7. Bake in the preheated oven for 45 minutes until golden brown on top and set in the middle.

Notes

Consider caramelizing onions for extra sweetness and richness. Optional add-ins like cooked bacon or different cheese varieties enhance flavor.
