A scrumptious fusion of rich chocolate and tart cherries, this cake is perfect for any celebration.

  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup unsweetened cocoa powder
  • 1 ¼ cups granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup boiling water
  • 1 ½ cups fresh or jarred cherries, pitted and halved
  • ½ cup granulated sugar (for cherry filling)
  • 1 tbsp lemon juice (optional)
  • 1 tbsp cornstarch (optional)
  • 2 cups heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract (for whipped cream)
  • Shaved chocolate or chocolate chips (for garnish)
  • Extra cherries (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Whisk together the all-purpose flour, baking powder, baking soda, salt, cocoa powder, and granulated sugar.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients and mix until smooth.
  4. Gradually pour in the boiling water, mixing until a thin batter forms.
  5. Divide the batter between the prepared pans and bake for 30-35 minutes.
  6. For the cherry filling, combine halved cherries, granulated sugar, and optional lemon juice in a saucepan and cook for 5-7 minutes.
  7. Beat the heavy cream, powdered sugar, and vanilla until soft peaks form.
  8. Layer one cake layer with cherry filling and whipped cream, then place the second layer on top and frost with remaining whipped cream.
  9. Garnish with shaved chocolate and extra cherries.
  10. Refrigerate the assembled cake for at least 2 hours before serving.

Notes

For extra flavor, try adding almond extract to the whipped cream.
