Delightful cookies that blend rich chocolate flavors with tart cherry jam, perfect for any gathering.

  • 1 cup (2 sticks) unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup cherry jam or preserves
  • 1/2 cup semi-sweet chocolate chips, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg yolks and vanilla extract until well incorporated.
  4. Gradually mix in the all-purpose flour, cocoa powder, and salt until a smooth dough forms.
  5. Roll the dough into balls about 1 inch in diameter and place them on the baking sheet.
  6. Press an indentation in the center of each ball using your thumb.
  7. Spoon cherry jam into each indentation.
  8. Bake for 12-15 minutes or until edges are firm.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. Melt chocolate chips and drizzle over the cooled cookies.

Notes

Ensure butter is softened but not melted. Chill dough if it feels too soft before shaping.
