These Soft and Chewy Oatmeal Cookies are a delightful blend of oatmeal, chocolate, and raisins, providing a comforting sweet snack perfect for any occasion.

  • 125g creamy butter, at room temperature
  • ½ cup rich brown sugar
  • ¼ cup sweet white granulated sugar
  • 1 large farm-fresh egg
  • 1 cup all-purpose flour
  • 1 ½ cups wholesome oatmeal
  • 1 tsp aromatic cinnamon
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp fine cornstarch
  • ¾ cup plump dried black raisins
  • ½ cup hand-crushed walnuts
  • ½ cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the creamy butter with both sugars and beat until light and fluffy, about 2-3 minutes.
  3. Add the egg to the mixture and mix until smooth.
  4. Whisk together the flour, wholesome oatmeal, aromatic cinnamon, baking soda, salt, and cornstarch in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently.
  6. Fold in the raisins, walnuts, and chocolate chips.
  7. Scoop mounds of dough onto the baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Do not overbake the cookies to maintain their chewy texture. Cool them on the baking sheet before transferring.
