A delightful dessert featuring a creamy cheesecake topped with vibrant cherry pie filling and a buttery graham cracker crust.

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 cup cherry pie filling
  • Fresh cherries (for garnish)
  • Whipped cream (for garnish)

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan, lining the bottom with parchment paper.
  2. Combine the graham cracker crumbs and melted butter in a medium bowl, press firmly into the bottom of the prepared pan.
  3. Bake for 10 minutes, then set aside to cool.
  4. Beat the softened cream cheese and granulated sugar in a large bowl until smooth and creamy.
  5. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
  6. Stir in the sour cream and heavy cream until smooth.
  7. Pour the filling over the cooled crust and smooth the top with a spatula.
  8. Bake for 50-60 minutes, until the center is set but slightly jiggly.
  9. Turn off the oven and let the cheesecake cool inside for 1 hour.
  10. Refrigerate for at least 4 hours or overnight for optimum taste and texture.
  11. Top with cherry pie filling just before serving, garnishing with fresh cherries and whipped cream.

Notes

For best results, prepare the cheesecake a day in advance and allow it to chill overnight. Use room temperature ingredients to avoid lumps.
