  • 2/3 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup cherry jam or preserves
  • 1/2 cup semi-sweet chocolate chips (melted)

Instructions

  1. Preheat Your Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the Butter and Sugar: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg yolks and vanilla extract.
  3. Make the Cookie Dough: Gradually mix in the all-purpose flour, cocoa powder, and salt until the dough is smooth.
  4. Form the Cookies: Roll the dough into balls about 1 inch in diameter and place them on the baking sheet. Make an indentation in the center of each ball with your thumb.
  5. Add the Jam: Spoon cherry jam into each indentation.
  6. Bake: Bake for 12-15 minutes until edges are firm. Cool on the baking sheet before transferring to a wire rack.
  7. Drizzle with Chocolate: Melt the chocolate chips and drizzle over the cookies once they have cooled.

Notes

Store baked cookies in an airtight container at room temperature for up to a week. Dough can be frozen for up to three months.
