  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup mini chocolate chips
  • 1 pint vanilla ice cream, softened
  • 1/2 cup chocolate chips (for drizzling)

Instructions

  1. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  2. Stir in the vanilla extract.
  3. Add the all-purpose flour and salt, mixing until fully combined.
  4. Fold in the mini chocolate chips.
  5. Press half of the cookie dough mixture into a greased 9×9-inch baking dish.
  6. Spread the softened vanilla ice cream over the cookie dough layer.
  7. Crumble the remaining cookie dough on top of the ice cream.
  8. Freeze for at least 4 hours until firm.
  9. Drizzle melted chocolate chips over the top.
  10. Cut into bars and serve.
