  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips
  • 1 quart chocolate chip ice cream, softened
  • 1 quart vanilla ice cream, softened
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract (for topping)
  • 1/4 cup mini chocolate chips (for topping)
  • Chocolate syrup (for drizzling)

Instructions

  1. Cream together the softened butter, brown sugar, granulated sugar, and vanilla extract in a mixing bowl.
  2. Incorporate the flour and salt until everything is combined, then mix in the mini chocolate chips.
  3. Prepare a 9-inch springform pan by lining the bottom with parchment paper.
  4. Spread half of the chocolate chip ice cream evenly on the bottom of the pan and freeze for 30 minutes.
  5. Add the vanilla ice cream layer over the chocolate, smoothing it out, and freeze for another 30 minutes.
  6. Crumb the cookie dough over the vanilla layer, pressing it gently, then freeze for another 30 minutes.
  7. Layer the remaining chocolate chip ice cream over the cookie dough, followed by the final layer of vanilla ice cream.
  8. Freeze for at least 4 hours, preferably overnight.
  9. Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  10. Remove the cake from the pan and spread the whipped cream over the top and sides, topping with mini chocolate chips and a drizzle of chocolate syrup.
  11. Slice and serve your delightful creation!

Notes

Allowing ice cream to soften slightly before layering will help with spreading. For a more set texture, freeze layers thoroughly.
