Cinnamon Swirl Rhubarb Bread

A delightful bread combining the tangy sweetness of rhubarb with the warm embrace of cinnamon.

Ingredients

  • 1 1/3 cups sugar, divided
  • 2 teaspoons ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 cup large diced rhubarb

Instructions

  1. Preheat your oven to 350°F. Grease a loaf pan with nonstick baking spray and line it with parchment paper.
  2. Mix together 1/3 cup of sugar with the ground cinnamon in a small bowl and set aside.
  3. Combine the flour, baking powder, salt, and the remaining 1 cup of sugar in a large mixing bowl. Whisk until evenly distributed.
  4. Whisk the egg in a separate bowl until well-beaten. Add in milk and vegetable oil, stirring until creamy.
  5. Fold the wet mixture into the dry ingredients using a spatula until just moistened.
  6. Gently fold in the diced rhubarb, ensuring it’s evenly distributed.
  7. Pour half of the batter into the loaf pan and smooth it down. Sprinkle half of the cinnamon sugar mixture over this layer.
  8. Pour the remaining batter and sprinkle the rest of the cinnamon sugar on top.
  9. Gently swirl the cinnamon sugar through the layers with an offset spatula.
  10. Bake in your preheated oven for about 60 minutes. Test for doneness with a toothpick.
  11. Cool the loaf in the pan for 10 minutes before transferring to a wire rack.

Notes

Ensure your baking powder is fresh for a good rise. Don’t overmix the batter to maintain a light texture.
