  • 1 (3–4 lb) chuck roast
  • Salt and black pepper
  • 2 tablespoons olive oil
  • 4 carrots, peeled and cut into chunks
  • 3 potatoes, peeled and cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves

Instructions

  1. Begin by seasoning your roast generously with salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat and sear the roast on all sides.
  3. Place the carrots, potatoes, onion, and minced garlic into your slow cooker.
  4. Set the seared roast on top of the vegetables.
  5. Whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary, then pour it over the roast.
  6. Add the bay leaves and cover the slow cooker with a lid.
  7. Cook on low for 480–540 minutes or high for 240–300 minutes until the meat is tender.
  8. Remove the bay leaves and serve the pot roast hot.

Notes

To enhance flavor, always sear the roast before slow cooking. Consider adding balsamic vinegar or different herbs for a unique twist.
