Delightful muffins that capture the essence of traditional coffee cake, with a fluffy texture and rich cinnamon flavor, topped with a sweet crumble.

  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup additional flour (for streusel)
  • 1/4 cup cold butter (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin with liners or a light coating of butter.
  2. Cream together softened butter and granulated sugar in a large bowl until light and fluffy.
  3. Beat in eggs one at a time, then gradually stir in milk until completely combined.
  4. In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.
  5. Slowly add the dry mixture to the wet ingredients, mixing gently until just combined.
  6. In another bowl, mix brown sugar, additional flour, chopped nuts (if using), and cold butter until crumbly for the streusel.
  7. Spoon batter into muffin cups, filling them halfway, and sprinkle streusel over the batter.
  8. Bake for 20-25 minutes or until a toothpick comes out clean when inserted into the center of a muffin.
  9. Cool slightly before transferring to a wire rack.

Notes

Use room-temperature ingredients for better blending. Consider adding vanilla extract for extra flavor.
