  • 1 1/2 cups whole wheat flour
  • 1/2 cup rolled oats
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup olive oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 tablespoons fresh herbs (such as chives or parsley)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. Whisk together cottage cheese, eggs, milk, and olive oil in a large bowl until smooth and creamy.
  3. Mix together whole wheat flour, rolled oats, baking powder, baking soda, garlic powder, salt, and pepper in another bowl.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Fold in the shredded cheese and fresh herbs if using.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
