  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup celery, chopped
  • 1 carrot, chopped
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 tbsp tomato paste
  • 2 tbsp butter
  • 1 tsp Old Bay seasoning
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat until fragrant.
  2. Add the diced onion, minced garlic, chopped celery, and carrots, cooking until softened for about 5-7 minutes.
  3. Stir in the tomato paste, Old Bay seasoning, paprika, cayenne pepper, salt, and pepper.
  4. Pour in the seafood stock and bring it to a gentle simmer for 10 minutes.
  5. Add the crab meat and shrimp, cooking for an additional 5-7 minutes until the shrimp is pink.
  6. Lower the heat and stir in the heavy cream and butter until melted.
  7. Blend the soup with an immersion blender for a silkier texture if desired.
  8. Serve hot, garnished with fresh herbs or cream.

Notes

For a lighter version, substitute half-and-half for heavy cream. Be careful not to overcook the shrimp or let the cream boil.
